Sweet awakening: vegan Pancakes

A favorite recipe for everyone, including me, who likes to eat something sweet and indulging for breakfast without

feeling guilty at all – because it’s soo good for you.

Ingredients (serves 2):

  • 1 cup flour: either a ready-to-use gluten-free mixture (without any added baking powder or salt) or spelt or wheat flour
  • 2 tablespoons baking powder
  • 1/8 teaspoon salt
  • 1 cup rice milk
  • 2 tablespoons coconut oil (you can also use vegetable oil)
  • 1 tablespoon agave sweetener
  • serve with fresh fruits and some agave sweetener

Combine the flour with the baking powder and salt. Add the rice milk, agave sweetener and the coconut oil to your mixture. Mix until smooth. Heat a pan to medium heat and give one big spoon full of your mixture into it. Flip when the edges looked stiffened. Heat your oven to low heat and keep your readily bakes pancakes warm inside. Serve the readily baked pancakes with fruits and some agave sweetener. Enjoy!
