Super sweet, super delicious, super beautiful, super last minute christmas present: SPICED CHOCOLATES

You can eat those chocolates anytime (and I mean it: ANYTIME) but they really make a nice christmas present because they look beautiful and some of the spices just fit so perfectly to a cozy winter evening. And the good news is: they are not only super delicious and super beautiful, they are also super fast and easy to make. So let’s start …

For three oval chocolates you need:

  • 275 g (9,7 OZ) bittersweet 70% chocolate of best quality (if you want to avoid dairy please make sure the chocolate does not contain milk or cream)
  • for all other ingredients please have a look below!

Chop the chocolate into uniform pieces and melt them over a hot water bath. For doing that you need a saucepan with a small amount of boiling water and a bowl, containing the chocolate chunks, that fits securely over the saucepan. Please make sure that the chocolate does not come into contact with even little drops of water, because it will seize and become unworkable!

Ginger-cashew-chocolate

  • 2 tablespoons minced fresh ginger
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 10 unsalted and roasted Cashews
  • 1 tablespoon dark brown sugar
  • a pinch of salt

Melt the brown sugar in a small pan over medium heat, add the cashews and a pinch of salt and caramelize until lightly brown. Fill one third of the melted chocolate in a bowl. Add the minced and ground ginger and cinnamon and mix thoroughly. Cast the chocolate mix on a baking sheet covered with baking paper and bring it into an oval shape. Top it with the caramelized cashews.

Orange-almond-cranberry-chocolate

  • 2 teaspoons orange extraxt
  • 1 teaspoon cinnamon
  • 2 teaspoons cranberries
  • dark brown sugar
  • 10 almonds
  • a pinch of salt

Melt the brown sugar in a small pan over medium heat, add the almonds and a pinch of salt and caramelize until lightly brown. Fill the second third of the melted chocolate in a bowl. Add the orange extract and cinnamon and mix thoroughly. Cast the chocolate mix on the baking sheet next to the first mix and bring it into an oval shape. Top it with the caramelized almonds and cranberries.

Peppermint chocolate with dots:

  • 1 teaspoon peppermint extract
  • 1 tablespoon white chocolate chips (if you want to avoid dairy replace them with bittersweet chocolate chips, just for the look and the texture)

Fill the last third of the melted chocolate in a bowl. Add the peppermint extract and mix thoroughly. Cast the chocolate mix on the baking sheet next to the other mixtures and bring it into an oval shape. Top it with chocolate chips.

Put the baking sheet into the fridge until the three chocolates become solid. Put them into a box and keep them refrigerated until christmas. And then: BRING JOY TO THE WORLD – FLOD YOUR LOVED ONES WITH SWEET DELIGHT. MMHHHH.
