“Chestnuts roasting on an open fire” – post-christmas nostalgia

I hope you all had a very good christmas time. What I like about christmas is in fact a mixed blessing: it brings back so many memories. There are lots of things I feel nostalgic about in this time and this brings me directly to the recipe I want to share with you. I admit that it’s rather a reminder of something you already know than a recipe. It’s like a good old friend knocking at your door. But he’s accompanied by a hot and juicy blonde: warm apple punch.

Roasted chestnuts (serves 4):

  • 4 cups fresh chestnuts

Preheat the oven to 400 degrees F (in Europe to about 200 degrees C). Use a sharp knife to cut an X into one side of each chestnut. Arrange chestnuts on a baking sheet with the cut sides up. Roast in oven for 20 minutes or until chestnuts are tender and easy to peel. Peel the nuts when they are cool enough to handle and enjoy the déjà-vu.

Warm apple punch (serves 4):

  • 4 cups unfiltered apple juice
  • 1 cup water
  • 2 teabags Classic India Spice Yogi tea
  • 1 cup dried apple rings

Put the apple juice and water in a saucepan over high heat. When boiling, bring the mixture to a gentle simmer and add the teabags and dried apple rings and let brew for 5 minutes. Remove the teabags and give the punch and apple rings into 4 heat-resistant glasses.
