Spring time salad with asparagus and peas


I’m on Mallorca and there is no doubt: spring is there! It’s green, sunny, there are tiny flowers everywhere, there’s a lot of asparagus, peas and all kinds of greens on the markets. So when my dear friend Ling, who’s a chef (and fashion designer) with her own catering company EATLING came to the island last weekend, she made a wonderful salad that just looks and tastes like a sunny day in April. I always feel excited in spring and I wander around, singing some phrases of one of my favourite Nina Simone songs:

LOVE it. So, that’s the taste corresponding to Nina’s song. Thank you, Sweet-Ling, for sharing it with me and the rest of the foodie gang out there!

Ingredients (serves 2 close friends):

  • 1 bunch green asparagus, cut into bite size pieces
  • 1 cup fresh peas
  • 1 avocado, sliced
  • 2 hands fresh salad leaves
  • 2 tablespoons fresh coriander, chopped
  • zest and juice of 1 lemon
  • 1/4 cup olive oil
  • 1 garlic clove, thinly sliced
  • sea salt and freshly ground black pepper to taste

Wash the salad leaves and arrange in a gorgeous salad bowl (most important). Bring a pot of water to the boil, add a pinch of salt and add asparagus pieces. After one minute add the peas and blanche for two more minutes and immediately rinse under cold water to keep their lovely green colour. Set aside.

Heat a pan with a little olive oil, add the garlic and cook until fragrant. Add the asparagus and fry for 2 minutes. Set aside.

To make the dressing, zest the lemon and squeeze the juice. Whisk together the olive oil, lemon zest and juice, sea salt and pepper.

Arrange the asparagus, peas and avocado slices on salad leaves. Pour the dressing over and sprinkle the chopped coriander & some black pepper on top. Serve with fresh bread.

    I wanted to let you know the author of the song ‘Here Comes The Sun’ is George Harrison (1969) of Beatle fame. Being a writer, and living with a songwriter, I have this thing about writers being given credit for their work.

    I didnt know Nina Simone sang this song her voice is so sultry and expressive I will try to hear her version it must be interesting, so thanks for the tip! I also would like to listen to you singing your favorite lyrics from the song. I bet you have a nice voice.

      thanks a lot for your comment! You’re right about giving credit! I added the author to the lyric text.

      You should definitely listen to Ninas version. It’s great and she sings the song very differently from the original Beatles version.
